Shirley Spear, owner of the Three Chimneys 5-Star Restaurant with Rooms on the Isle of Skye, has worked with Ian Macleod Distillers to produce some mouth watering recipes using Isle of Skye Blended Scotch Whisky.

Collops of Highland Venison with Pearl Barley Risotto
This is a delicious dish to impress your friends and family with. The Scottish word “collop” is derived from the French word “escalope”.
The pearl barley risotto may be prepared in advance and the venison takes only minutes to cook similar to a fillet steak, together with the Isle of Skye Whisky Cream Sauce to serve.Ask your butcher for 4 x thick slices from a single loin of venison, or more if you are serving a larger party.

Home-Cured Salmon
This is ideal for entertaining at home for a family celebration meal, or a buffet party, especially at Christmas and New Year.
Once the side of salmon is cured,it will keep for at least 5 days, wrapped and stored in the refrigerator. It could be used for several meals, in a number of ways, including a light lunch with salad and fresh bread, delicious in sandwiches, canapés and as a very special starter dish for a dinner party. Good quality farmed salmon is important as it is less oily.

Lemon Parfait with Puff Candy Tuiles
Everything can be made in advance for this dessert.
The cream mixture can be frozen and served in slices as a parfait, or refrigerated and served to accompany fresh fruit as a syllabub. And the Puff Candy; the Scots love their sweeties as much as their whisky and this is no exception! Serve as a garnish.
